The summer of the Margarita continues. Moving on from grapefruit to explore other options and pursue other dreams, I embarked on a pineapple adventure yesterday. It started when I saw the perfect pineapple glasses at anthropologie, I walked in the store to look for a dress, they shouted my name, and I knew it was fate.
I started experimenting with (and drinking) these gems around 2 in the afternoon yesterday, and enjoyed a wonderfully pleasant and laughter filled afternoon and evening of entertaining. I’m not sure if it was the tequila, or the company, or the online shopping with Ellie, or the magic of my first crepe cake. Whatever it was, yesterday was everything a summer Sunday should be.
This coming Sunday afternoon, as I’m making ppt slides in the silence of my office, I will look back fondly on the pineapple gems and tipsiness of this past weekend, and it will all be worth it.
Flexible recipe, but I encourage you to give it a try.
4 cups of cubed fresh pineapple
1 cup of freshly squeezed lime juice (this was about 15 limes)
1 cup of tequilla
1 cup Contreau
splash of my Whole Foods Italian soda
Blend the first four ingredients in a blender. Mixture will be thick. Serve over crushed ice and top with a splash of the soda, garnish with lime slice.
